1- 1/2 can of beer (your choice of brand)
1- 31/2 to 4-pound chicken
Mama J's Seasoning (Original or Spicy)

Pour out (or drink. YEAH!) half a can of beer and add two crushed cloves of garlic into the cans with remaining beer. Generously season the chicken inside and out with Mama J's Seasoning Mix. Insert a wedge of onion into the neck hole to keep the moisture in and add a little flavor. Place cavity of chicken, legs pointing down, onto the open can so that it supports chicken upright. You can also purchase and optional beer can chicken rack ($4.99 at Lowes) like you see in the picture.

Prepare grill for high, indirect heat. For a charcoal grill, bank coals on one side of grill; for a gas grill, leave middle burner(s) turned off.

OPTIONAL: place the chicken in a drip pan a add a 1/2 inch of beer into the pan.

Place can, with chicken, on grill over the unlit burner(s) (in a drip pan). Cook chicken with grill lid down for 1hour 25 minutes at 350°F, or until cooked through or an instant-read thermometer inserted into the thickest part of thigh registers 165°F (If using charcoal, you may need to add more to maintain heat.) Let chicken rest 10 minutes before carving. Serve with pan drippings.
